Cooktops: induction, gas, glass-ceramic
Three ways to heat a pot, the choice is yours.

What it is
Three technologies for heating a pot, with very different logic. Induction directly heats the bottom of the pan using a magnetic field, fast and precise. Gas heats with a visible flame, adjustable instantly. Glass-ceramic heats a coil under a glass cooktop, slower to heat up and cool down.
« Induction for speed and fine control, perfect for a precise simmer. »
When to use it
Induction for speed and fine control, perfect for a precise simmer. Gas for immediate visual feedback, favored in professional kitchens and for wok cooking. Glass-ceramic is suitable for regular use but requires anticipating temperature changes, as it reacts with a delay.
« Gas: requires a gas line and good burner maintenance. »
How to choose
Induction: verify that all your cookware is compatible (magnetic base). Gas: requires a gas line and good burner maintenance. Glass-ceramic: the easiest to install, but the least responsive. The choice depends mainly on the existing kitchen setup rather than pure preference.

Maintenance
- Induction and glass-ceramic: clean when cool with a dedicated glass product
- Gas: regularly disassemble and wash the grates and burners
- Avoid boilovers without cleaning immediately, as they can burn and stick
- Ensure utensils do not scratch the glass surface
« Using an incompatible pot on an induction cooktop: it will not heat, and you will think the cooktop is broken. »
The common mistake
Using an incompatible pot on an induction cooktop: it will not heat, and you will think the cooktop is broken. Another common mistake: leaving a sugary boilover on a hot glass-ceramic cooktop, it caramelizes and becomes very difficult to remove.
