Coffee-Crusted Bavette Steak, Strong Coffee-Cocoa Jus, Roasted Baby Potatoes and Red Onion Pickles

A bavette steak seared in a ground coffee crust, napped with a brown jus where coffee meets cocoa, served with baby potatoes, sautéed mushrooms, and onion pickles that cut through the bitterness. Coffee is everywhere, but never gratuitous: it coats, it binds, it awakens.

Ingredients

  • 800 g bavette steak
  • 4 tbsp strong ground coffee
  • 1 tsp unsweetened cocoa powder
  • 800 g baby potatoes
  • 300 g whole white mushrooms
  • 2 pieces red onion
  • 2 cloves garlic clove
  • 4 sprigs fresh thyme
  • 20 cl beef broth
  • 3 tbsp apple cider vinegar
  • 1 tbsp granulated sugar
  • 80 g unsalted butter
  • 3 tbsp neutral oil
  • to taste fine salt
  • to taste black peppercorns

Method

  1. Prepare the coffee butter and red onion pickles (see prepared components); chill in the refrigerator.
  2. Preheat the oven to 200°C. Wash the baby potatoes, cut them in half, toss with oil, salt, and thyme, then roast until golden and tender.
  3. Steep half of the ground coffee in the hot beef broth off the heat, like tea, then strain and reserve this meat coffee.
  4. Pat the bavette steak dry with paper towels. Mix the remaining ground coffee with salt and pepper, and generously rub it all over the meat to form the crust.
  5. Sauté the whole mushrooms over high heat with oil, crushed garlic, and a knob of coffee butter until well browned. Salt and keep warm.
  6. In a very hot pan, sear the bavette steak with oil, two to three minutes per side for medium-rare, without burning the coffee crust. Add a knob of coffee butter at the end of cooking and baste the meat.
  7. Remove the meat and let it rest under a sheet of aluminum foil while preparing the jus.
  8. In the same pan, deglaze with the coffee-infused broth, add the cocoa powder, and reduce over high heat until you have a glossy jus that coats the back of a spoon. Mount with a final knob of coffee butter; adjust the seasoning.
  9. Slice the bavette steak on a bias against the grain. Plate on warm dishes: beef slices napped with coffee-cocoa jus, roasted baby potatoes, mushrooms, and a small ring of drained red onion pickles.
