South African bobotie with chutney

A golden and soft bobotie, layered with spiced ground beef, fruity chutney, and a lightly set egg custard. Served with fragrant yellow rice, it is a generous, family-friendly, and very comforting dish.

Ingredients

  • 650 g ground beef
  • 1 piece yellow onion
  • 2 cloves garlic
  • 10 g fresh ginger
  • 2 tbsp neutral oil
  • 2 tsp mild curry powder
  • 1 tsp ground turmeric
  • 1 pinch ground cinnamon
  • 2 slices stale white sandwich bread
  • 250 ml whole milk
  • 3 tbsp mango chutney
  • 1 tbsp apple cider vinegar
  • 40 g golden raisins
  • 25 g sliced almonds
  • 3 pieces eggs
  • 2 leaves bay leaves
  • 320 g basmati rice
  • 640 ml water
  • 20 g unsalted butter
  • to taste fine salt
  • to taste ground black pepper

Method

  1. Soak the stale bread in some of the milk while the oven preheats to moderate heat; it should become soft and fall apart easily under your fingers.
  2. Slice the onion, grate the garlic and ginger, then sauté them in oil over medium heat until the onion is translucent and smells slightly sweet, about 8 minutes.
  3. Add the mild curry powder, turmeric, and cinnamon, then stir over the heat until the spices smell vibrant and color the oil, about 1 minute.
  4. Add the ground meat, salt, pepper, and break it up with a spoon; cook until it loses its raw appearance and the juices begin to reduce, about 8 to 10 minutes.
  5. Lightly squeeze the bread, crumble it into the pan with the chutney, vinegar, and raisins, then simmer until you have a moist but not runny filling, with a sweet-spiced aroma, about 5 minutes.
  6. Pour the filling into a baking dish, smooth without packing it down, then scatter with sliced almonds so they stick to the surface.
  7. Beat the eggs with the remaining milk, salt lightly, then pour gently over the filling; place the bay leaves on top and bake until the custard is set, golden in places, and still soft in the center, about 30 to 35 minutes.
  8. During baking, rinse the rice until the water is less cloudy, then cook it with the water, butter, salt, and a touch of turmeric if you want to enhance the color; it should be tender, separated, and fragrant.
  9. Let the bobotie rest for a few minutes out of the oven so the slice holds its shape, then serve hot with the yellow rice and extra chutney at the table.
