
Lightened crepes stuffed with homemade bolognese, folded into balls and baked with mozzarella. A comforting, high-protein and low-calorie dish, perfect for a balanced meal.
Ingredients
- 300 g 5% fat ground beef
- 1 piece Red onion
- 2 cloves Garlic
- 2 pieces Carrots
- 200 ml Beef broth
- 200 g Canned crushed tomatoes
- 15 g Tomato paste
- 15 ml Soy sauce
- 1 tsp Maple syrup
- 10 g Dark chocolate
- 6 pieces Lightened crepes (homemade or store-bought)
- 60 g Shredded mozzarella
Method
- Peel and finely chop the red onion and garlic. Finely dice the carrots (brunoise).
- Heat a large nonstick skillet over high heat, spraying with a light film of olive oil. Add the ground beef and brown it, breaking it up with a spatula, until well browned and all the water has evaporated (about 5 minutes).
- Add the onion, garlic and diced carrots to the skillet. Continue cooking for 3 to 4 minutes while stirring, until the vegetables are tender and slightly translucent.
- Pour in the beef broth and scrape the bottom of the skillet with a wooden spoon to release the browned bits (deglaze). Let reduce by half, about 2 minutes.
- Stir in the crushed tomatoes, tomato paste, soy sauce, maple syrup and the dark chocolate square. Mix, then reduce the heat and simmer gently for 10 to 15 minutes, until the sauce thickens and becomes rich. Taste and adjust the seasoning (salt, pepper) if necessary.
- Preheat the oven to 200°C on convection mode.
- Take a lightened crepe and place it in a small ramekin or bowl to form a well. Place one-sixth of the bolognese sauce in the center. Fold the edges of the crepe toward the center and press them to form a tightly closed ball. Carefully flip the ball over and place it in a baking dish. Repeat with the remaining 5 crepes.
- Distribute the shredded mozzarella evenly over the top of each ball.
- Place the dish in the oven and bake for 5 to 8 minutes, until the cheese is completely melted and lightly browned in spots.
- Remove from the oven, let rest for 1 minute, then serve hot. Optionally, serve with a green salad.
