Greek frappé

A frothy, bright, and thirst-quenching Greek iced coffee, prepared in a shaker with instant coffee, very cold water, and ice cubes. Serve it tall with a dense foam and, if desired, a splash of evaporated milk.

Ingredients

  • 8 tsp instant coffee like Nescafé Classic
  • to taste granulated sugar
  • 800 ml cold water
  • 24 pieces ice cubes
  • 120 ml evaporated milk

Method

  1. Chill tall glasses while you prepare the coffee, until they are very cold to the touch.
  2. Put the instant coffee and sugar in a shaker or a jar with a lid, adjusting the sugar according to the desired style.
  3. Add just a splash of cold water, then seal and shake vigorously until you have a thick, beige, and glossy foam.
  4. Distribute the foam into the glasses without breaking it, using a spoon to help if it sticks to the sides.
  5. Add the ice cubes to each glass gently to keep the foam on the surface.
  6. Top up with cold water poured down the side of the glass until the coffee is ice-cold and the foam rises naturally.
  7. Add a splash of evaporated milk if you prefer a softer, rounder version, then stir very lightly from the bottom.
  8. Serve immediately, with a straw or a long spoon, while the foam is still high and the glass is frosted with condensation.
