Traditional Calpis Soda

The classic Japanese beverage made with Calpis concentrate, very cold sparkling water, and ice cubes. It is sweet, slightly tangy, milky, and brightly effervescent.

Ingredients

  • 50 ml Original Calpis concentrate
  • 200 ml plain sparkling water
  • 100 g ice cubes

Method

  1. Chill the Calpis concentrate, sparkling water, and glass in the refrigerator beforehand so all elements are very cold.
  2. Fill a tall, clean highball glass with ice cubes.
  3. Pour the Calpis concentrate over the ice.
  4. Tilt the glass slightly and slowly pour the sparkling water down the side to preserve as many bubbles as possible.
  5. Stir gently from the bottom up with a long spoon, using only a few motions.
  6. Serve immediately, without a garnish.
