
A rustic and comforting Irish mashed potato dish, enriched with milk infused with scallions and melting butter. Simple, creamy, and very traditional, it perfectly accompanies roast meats, bacon, or sausages.
Ingredients
- 1 kg starchy potatoes
- 1 bunch scallions
- 250 ml whole milk
- 80 g unsalted butter
- to taste fine salt
- to taste ground black pepper
Method
- Peel the potatoes, cut them into even pieces, then rinse them quickly until the water feels clear.
- Place the potatoes in a pot of cold salted water, bring to a simmer, and cook until a knife blade pierces them without resistance.
- During cooking, finely slice the scallions, separating the white and green parts if they are very thick.
- Gently heat the milk with the scallions until it steams slightly and has a clean, sweet onion aroma, without letting it boil.
- Drain the potatoes, return them to the hot pot off the heat, and let them dry out until the steam clearly escapes.
- Mash the potatoes with a potato masher or ricer until you achieve a soft texture, still rustic but with no large lumps.
- Gradually incorporate the hot scallion milk, then add most of the butter until the mashed potatoes become creamy and glossy.
- Taste, adjust the salt and pepper, then serve piping hot in a bowl or shallow plate with the remaining melted butter in the center.
