Lemon-marinated shish taouk

Tender and fragrant Lebanese chicken skewers, marinated in lemon, garlic, and sweet spices. The quick cooking over high heat gives golden, smoky edges while keeping the meat juicy.

Ingredients

  • 800 g chicken breasts
  • 120 g plain Greek yogurt
  • 2 pieces lemon
  • 3 tbsp olive oil
  • 1 tbsp tomato paste
  • 4 cloves garlic
  • 2 tsp sweet paprika
  • 1 tsp allspice
  • 1/2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 1/4 tsp fine salt
  • 1/2 tsp ground black pepper
  • 1 piece red onion
  • 0.5 bunches flat-leaf parsley
  • 4 pieces pita breads
  • 8 pieces wooden skewers
  • 1 piece lemon-garlic marinade for shish taouk

Method

  1. Cut the chicken breasts into even pieces, large enough to remain juicy during cooking, then pat them dry with paper towels.
  2. Prepare the lemon-garlic marinade in a large bowl: it should be smooth, orange, glossy, and smell distinctly of fresh lemon and garlic.
  3. Add the chicken to the marinade, mix thoroughly to coat each piece, cover, and let rest in the refrigerator until the meat is fragrant and slightly tenderized.
  4. Soak the wooden skewers if using, then thread the chicken on without packing it too tightly so that the heat can circulate between the pieces.
  5. Heat a grill pan, plancha, or the oven broiler until very hot; the surface must be hot enough to make the chicken sizzle on contact.
  6. Cook the skewers, turning them regularly, until the sides are golden with some grill marks, and the center is fully cooked but still tender.
  7. During cooking, slice the red onion, pick the parsley leaves, and warm the pita breads so they become soft.
  8. Let the skewers rest briefly off the heat, then serve with the parsley, red onion, pita breads, and a squeeze of fresh lemon if desired.
