
A great British curry house classic: grilled spiced chicken coated in a mild, fragrant, and rich tomato-cream sauce. Served with basmati rice or naan, it is comforting without being heavy.
Ingredients
- 700 g boneless skinless chicken thighs
- 1 piece homemade tikka marinade
- 150 g plain Greek yogurt
- 1 piece lemon
- 2 tbsp ginger-garlic paste
- 3 tsp garam masala
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp sweet paprika
- 1 tsp ground turmeric
- 1/2 tsp ground cayenne pepper
- 1 1/2 tsp fine salt
- 3 tbsp sunflower oil
- 30 g unsalted butter
- 2 pieces yellow onions
- 2 tbsp tomato paste
- 400 ml tomato purée
- 1 tsp granulated sugar
- 150 ml heavy cream
- 100 ml water
- 0.5 bunches fresh cilantro leaves
- 800 g cooked basmati rice
Method
- Cut the chicken into even pieces, then coat it with the homemade tikka marinade; let it rest in the refrigerator until the meat is well-flavored and lightly colored.
- Heat a large skillet, plancha, or the oven broiler to high heat, oil lightly, then sear the chicken until the edges brown and the inside is almost cooked through; set aside with its juices.
- In a sauté pan, melt the butter with the oil, add the finely sliced onions and cook until they become meltingly soft, golden, and smell sweet.
- Add the tomato paste, the rest of the spices, and a touch of ginger-garlic paste, then stir until the mixture darkens slightly and smells like roasted tomatoes.
- Pour in the tomato purée with a little water, scrape the bottom of the sauté pan, and simmer until the sauce thickens and the oil starts to bead on the surface.
- Add the heavy cream and sugar, then blend briefly if a very smooth texture is desired; the sauce should be velvety, orange, and mild without losing its spiced aroma.
- Return the grilled chicken and its juices to the sauce, then let it simmer gently until the meat is tender and well coated.
- Taste and adjust the salt, lemon, or cayenne according to the desired balance, then turn off the heat when the sauce is glossy and creamy.
- Serve hot in bowls or deep plates, sprinkle with fresh cilantro, and serve with cooked basmati rice.
