Smashed cucumber salad

A classic Taiwanese street food favorite, ultra refreshing and crisp. Smashed cucumbers soak up a punchy, craveable umami dressing.

Ingredients

  • 2 pieces Cucumber
  • 1 pinch Coarse salt
  • 2 cloves Garlic
  • 2 tbsp Light soy sauce
  • 1 tbsp Chinese black rice vinegar
  • 1 tsp Brown sugar
  • 1 tbsp Toasted sesame oil
  • 1 piece Red bird's eye chile
  • 1 tbsp Toasted sesame seeds

Method

  1. Rinse and pat dry the cucumbers, then set them on a cutting board.
  2. Smack the cucumbers firmly with the flat side of a wide knife or cleaver to crush them and create irregular cracks.
  3. Slice the smashed cucumbers into bite sized pieces, keeping the seeds intact for texture.
  4. Transfer the pieces to a bowl, toss with coarse salt, and let drain until they release their excess water.
  5. Drain off the accumulated liquid and gently squeeze the cucumber pieces to remove excess moisture without mashing them.
  6. Make the signature dressing by finely mincing the garlic and chile, then whisking them together with the soy sauce, black vinegar, brown sugar, and toasted sesame oil until the sugar dissolves.
  7. Pour the dressing over the drained cucumbers and toss thoroughly to coat every piece.
  8. Chill in the refrigerator to let the flavors meld and the salad cool through.
  9. To serve, transfer to a bowl and garnish generously with toasted sesame seeds.
