
A quick and flavorful recipe for butter-sautéed shrimp with onions and scallion, typical of the American South. Served coated in a slightly rich sauce, they are ideal for brunch or a light dinner.
Ingredients
- 85 g unsalted butter
- 2 pieces onions
- 50 g scallion (sliced)
- 2 pieces garlic cloves
- 5 g kosher salt
- 900 g medium or large shrimp, peeled and deveined
- 120 ml water
Method
- Finely chop the onions, thinly slice the scallion, and mince the garlic.
- Melt the butter in a large skillet (12 inches / 30 cm) over medium heat until it foams.
- Add the onions, scallion, garlic, and salt. Cook, stirring occasionally, until the onions are tender but not browned, about 5 minutes.
- Add the whole shrimp and cook, stirring, for 1 minute.
- Pour in half of the water (about 120 ml) and bring to a gentle simmer.
- Simmer gently, stirring, until the shrimp are just cooked through, 2 to 3 minutes. The sauce should be slightly rich; add a little more water if it seems too dry.
- Adjust the seasoning with salt and pepper (ground black pepper to taste).
- Serve immediately, spooning the butter sauce over the shrimp.
