
Crispy breaded vegetable sticks baked in the oven, served with a creamy yogurt sauce - a fun, balanced alternative to classic fries, perfect for kids.
Ingredients
- 450 g zucchini
- 400 g sweet potato
- 100 g fine breadcrumbs
- 2 pieces eggs
- 3 tbsp olive oil
- 1 tsp sweet paprika
- to taste salt
- 200 g plain Greek yogurt
- 1 tbsp lemon juice
- 1/4 tsp garlic powder
- 4 sprigs fresh parsley
Method
- Preheat the oven to 200 °C (gas mark 6-7).
- Wash the zucchini and sweet potato. Trim the ends, then cut into even sticks (about 1 cm thick).
- Beat the eggs in a shallow dish. In another dish, mix the breadcrumbs, sweet paprika, and a pinch of salt.
- Dip each stick first into the beaten egg, then into the breadcrumbs, pressing lightly to adhere.
- Arrange the sticks on a baking sheet lined with parchment paper, without overlapping. Drizzle with olive oil.
- Bake for 20 to 25 minutes, flipping the fries halfway through, until they are golden brown and crispy.
- While baking, prepare the yogurt sauce (see prepared component).
- Serve the vegetable fries hot, accompanied by the sauce and garnished with a few parsley leaves. They can also be served in paper cones for added fun.
