Homemade ketchup

An old-fashioned homemade ketchup, gently simmered until smooth, glossy, and concentrated. It blends tomato, vinegar, brown sugar, and warm spices to recreate the classic flavor of the traditional condiment.

Ingredients

  • 700 g very ripe tomatoes
  • 1 piece yellow onion
  • 1 clove garlic
  • 80 ml apple cider vinegar
  • 45 g brown sugar
  • 1 tbsp tomato paste
  • 1 tsp fine salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp sweet paprika
  • 1 pinch ground cinnamon
  • 1 pinch ground cloves
  • 1 tbsp olive oil

Method

  1. Peel the tomatoes if their skin is thick, then roughly chop them; the juice must remain with the flesh to give body to the sauce.
  2. Heat the oil in a heavy-bottomed saucepan, add the sliced onion, and sweat it gently until it becomes translucent and smells slightly sweet.
  3. Add the minced garlic, tomato paste, and spices, then stir briefly until the mixture smells like roasted tomato and warm spices.
  4. Add the chopped tomatoes, vinegar, brown sugar, salt, and pepper; bring to a simmer, stirring to dissolve the sugar.
  5. Let simmer over low heat, pan partially covered, until the tomatoes crush easily and the sauce thickens noticeably.
  6. Blend the mixture finely until smooth, then pass it through a fine-mesh sieve if a very silky ketchup is desired.
  7. Return the sauce to the saucepan and cook gently again until it coats the back of a spoon with an even gloss.
  8. Taste off the heat and adjust the balance with a little salt, sugar, or vinegar depending on the acidity of the tomatoes; the result should be sweet, tangy, and deeply tomato-flavored.
  9. Let cool before serving or transferring to a clean jar; the texture will firm up slightly as it cools.
