
Juicy and fragrant köfte, grilled until they develop a golden, smoky crust, served with tomatoes, sweet peppers, and sumac onion. A great Turkish classic, simple to prepare at home.
Ingredients
- 500 g 15% fat ground beef
- 100 g ground lamb
- 1 piece yellow onion
- 1 clove garlic
- 40 g fine breadcrumbs
- 1 piece egg
- 0.5 bunches fresh flat-leaf parsley
- 1 tsp ground cumin
- 1 tsp sweet paprika
- 1 tsp Turkish sweet pepper flakes
- 1 tsp fine salt
- to taste ground black pepper
- 2 tbsp olive oil
- 4 pieces vine tomatoes
- 4 pieces long sweet green peppers
- 1 piece red onion
- 1 tsp ground sumac
- 1 piece lemon
- 4 pieces Turkish flatbread or pita bread
Method
- Grate the yellow onion, press it slightly to remove excess water, then place it in a large bowl with the finely grated garlic; the mixture should smell sweet, fresh, and pungent without being soggy.
- Add the ground meats, breadcrumbs, egg, chopped parsley, cumin, paprika, Turkish sweet pepper, salt, and pepper; mix by hand until the filling becomes homogeneous, sticky, and soft.
- Cover the mixture and let it rest in the refrigerator until it is firmer and very fragrant; it should hold together without crumbling when squeezed.
- Lightly oil your hands, then shape oval and flattened köfte; the surface should be smooth, without large cracks, to grill evenly.
- Heat a grill pan, a griddle, or a home barbecue until a drop of water sizzles immediately; very lightly brush the surface with olive oil.
- Grill the köfte without moving them at first, until a brown crust forms and the smell of grilled meat and spices emerges; flip them and continue until they are golden brown and still juicy.
- Grill the tomatoes and sweet green peppers alongside the köfte, until their skin blisters and blackens in places while remaining tender.
- Thinly slice the red onion, mix it with the sumac and a squeeze of lemon juice; it should become bright, tangy, and slightly crunchy.
- Serve the hot köfte with the grilled tomatoes, sweet peppers, sumac onion, lemon wedges, and the warmed flatbread, so that the meat juices lightly soak the bread.
