Mango lassi

A creamy, refreshing, and fragrant mango lassi, true to the Indian classic. Ripe mango, yogurt, and a touch of cardamom create a sweet, tangy, and highly thirst-quenching drink.

Ingredients

  • 3 pieces ripe mangoes
  • 500 g plain whole milk yogurt
  • 200 ml whole or reduced-fat milk
  • 30 g granulated sugar
  • 1 pinch ground cardamom
  • 8 pieces ice cubes

Method

  1. Wash and peel the mangoes, then cut the flesh away from the pit, removing any fibrous parts if necessary.
  2. Place the mango flesh in a blender and blend until you get a smooth, glossy puree with no visible chunks.
  3. Add the plain yogurt and blend again until the texture becomes thick, homogenous, and creamy.
  4. Pour in the milk gradually, blending between each addition, until you achieve a fluid but still coating consistency.
  5. Add the sugar and cardamom, then blend briefly to distribute the flavors without heating the mixture.
  6. Taste the lassi: it should be refreshing, sweet, slightly tangy, and highly fragrant with mango; adjust only if the fruit lacks ripeness.
  7. Add the ice cubes and blend just enough to chill and lighten the texture without making it watery.
  8. Serve immediately in well-chilled bowls or glasses, with a smooth and frothy surface.
