
Lightly sweetened triangular fritters flavored with coconut and cardamom, an East African breakfast classic.
Ingredients
- 500 g Wheat flour
- 200 ml Coconut milk
- 80 g Sugar
- 40 g Grated coconut
- 2 tsp Baking powder
- 1 tsp Ground cardamom
- 1 piece Egg
- 1 pinch Salt
- 1 l Frying oil
Method
- In a large bowl, mix the flour, sugar, grated coconut, baking powder, cardamom, and salt.
- Beat the egg with the coconut milk, then pour this mixture into the dry ingredients.
- Knead until you get a soft, non-sticky dough, adding a little flour if needed.
- Cover and let rest for 15 minutes at room temperature.
- Roll out the dough to a 1 cm thickness, cut out squares, and then cut them in half to form triangles.
- Heat the oil to 170 °C and fry the fritters in small batches.
- Fry until golden, 2 to 3 minutes on each side, until they puff up and take on a beautiful amber color.
- Drain on paper towels and serve warm.
