
A fit and flavorful version of McNuggets, with nearly half the calories and 50 % more protein than classic nuggets.
Ingredients
- 500 g raw chicken
- 1 piece egg
- 30 g 0 % fromage blanc (skyr)
- 10 g grated Parmesan
- 2 tsp salt
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp sucralose or stevia
- 1/2 tsp white pepper
- 100 g wheat flour
- 5 g baking powder
- 5 g cooking oil spray
Method
- In a blender, place the raw chicken cut into pieces, the egg, skyr, grated Parmesan, salt, paprika, garlic powder, onion powder, sucralose, and white pepper. Blend until perfectly smooth and homogeneous, with no visible pieces.
- Lightly dampen your hands with water to keep the mixture from sticking. Take portions of the mixture and shape them into irregular nuggets about the size of a large thumb. Place them as you go on a baking sheet lined with parchment paper.
- Place the baking sheet in the freezer for 10 to 15 minutes. This firms up the nuggets and makes them easier to coat.
- Prepare the coating: in a bowl, mix the flour, baking powder, and the same spices used in the mixture (salt, paprika, garlic, onion, sucralose, and pepper) in equivalent amounts. Adjust the proportions to taste.
- Coat each nugget in the coating mixture, turning them gently so they are well covered. Tap lightly to remove excess flour.
- Arrange the coated nuggets on the baking sheet. Spray them evenly with cooking oil on all sides.
- Cooking: in an air fryer, cook at 200°C for 12 to 15 minutes, turning halfway through, until the coating is golden and crisp. In a conventional oven, cook at 200°C for 25 to 30 minutes, turning halfway through.
- Let rest for 2 minutes before serving. The nuggets are best hot, served with a sauce of your choice (ketchup, light mayonnaise, etc.; not included in this recipe).
