
A dessert glass where fresh goat cheese, whisked into a dark chocolate ganache, brings freshness and a slight salinity to the melting cocoa. Finished with a crunch of toasted hazelnuts, a drizzle of mild olive oil, and a touch of balsamic for brightness.
Ingredients
- 150 g fresh goat cheese
- 80 g 70% dark chocolate
- 100 ml heavy cream
- 30 g whole hazelnuts
- 1 tbsp granulated sugar
- 1 tbsp mild olive oil
- 1 tsp balsamic vinegar
- 1 pinch flaky sea salt
Method
- Dry-toast the hazelnuts in a skillet until golden and fragrant, roughly chop them, and set aside.
- Chop the dark chocolate and place it in a bowl.
- Heat the heavy cream with the sugar until simmering, pour it over the chocolate, wait one minute, then stir in the center until you have a smooth and glossy ganache.
- Let the ganache cool for a few minutes, then whisk in the fresh goat cheese vigorously until you have a smooth, airy mousse.
- Divide the goat cheese and chocolate mousse between two glasses and refrigerate for at least one hour to set.
- Right before serving, sprinkle each glass with chopped hazelnuts, add a drizzle of olive oil, a few drops of balsamic vinegar, and a light dusting of flaky sea salt.
