Grilled lemongrass mui tau pork

Tender, juicy slices of pork collar marinated with fresh lemongrass, garlic, and savory aromatics, then seared over high heat for a glossy, crisp, caramelized crust.

Ingredients

  • 800 g pork collar (mui tau)
  • 4 pieces fresh lemongrass stalks
  • 3 pieces fresh shallots
  • 4 cloves garlic cloves
  • 2 tbsp 40°N fish sauce
  • 2 tbsp premium oyster sauce
  • 1 tbsp dark soy sauce
  • 2 tbsp runny wildflower honey
  • 2 tbsp high-oleic sunflower oil
  • 1 tsp toasted sesame oil
  • 1/2 tsp ground black pepper

Method

  1. Slice the pork collar (mui tau) across the grain into uniform 5 mm thick pieces, then lightly pound each slice with the flat side of a chef's knife to tenderize the meat.
  2. Peel away the tough outer layers of the fresh lemongrass stalks to expose the tender pale core, thinly slice it into rounds, and mince finely.
  3. Peel and finely mince the fresh shallots and garlic cloves.
  4. In a wide shallow dish, combine the minced lemongrass, shallots, garlic, 40°N fish sauce, premium oyster sauce, dark soy sauce, runny wild honey, toasted sesame oil, ground black pepper, and half of the high-oleic sunflower oil to make the marinade.
  5. Add the pork collar slices to the marinade and massage each piece by hand to coat both sides thoroughly. Cover with plastic wrap and marinate in the refrigerator at 4°C for at least 2 hours.
  6. Heat a cast-iron grill pan or flat-top grill over high heat to 220°C to 230°C (or prepare a hot charcoal grill with white-hot coals), then lightly oil the surface with the remaining high-oleic sunflower oil.
  7. Lay the pork slices flat in a single layer without overlapping. Grill over high heat for 3 to 4 minutes without moving them, until the underside is deeply caramelized with clear grill marks.
  8. Flip the slices and cook the other side for 3 to 4 minutes, basting regularly with the remaining marinade, until glazed, crisp along the edges, and the internal temperature reaches 71°C on a meat thermometer.
  9. Transfer the pork to a warm plate, tent loosely with aluminum foil, and let it rest for 3 minutes before serving.
