Light salmon pasta

A lighter, ultra-creamy salmon pasta, high in protein and low in calories without sacrificing flavor.

Ingredients

  • 160 g pasta (penne or spaghetti)
  • 200 g fresh salmon
  • 1 tsp oil spray
  • 30 ml soy sauce
  • 50 ml 7% cream
  • 50 g Philadelphia Light
  • 15 g tomato paste
  • 30 g zero-sugar ketchup
  • 1 tsp mustard
  • 2 ml hot sauce (such as Tabasco)
  • 2 g smoked paprika
  • 2 g garlic powder
  • 2 g onion powder
  • 1 pinch ground black pepper
  • 60 g smoked salmon (for the sauce)
  • 20 g smoked salmon (for topping)
  • 10 g chopped capers
  • 5 g fresh chives, finely chopped

Method

  1. In a large pot of salted boiling water, cook the pasta al dente according to the time on the package. Reserve one cup of pasta water before draining. Set aside.
  2. Meanwhile, cut the fresh salmon into 2 to 3 cm cubes. Heat oil spray in a nonstick skillet over high heat. Sear the salmon cubes on all sides until nicely browned (about 2 to 3 minutes). Remove and set aside on a plate.
  3. In the same hot skillet, pour in the soy sauce. Scrape up the browned bits with a wooden spatula. Lower the heat to medium-low, then add the cream, Philadelphia, tomato paste, ketchup, mustard, and hot sauce. Stir until smooth.
  4. Stir in a little pasta water (about 4 to 5 tablespoons) to loosen the sauce. Bring to a gentle boil, then simmer for 1 to 2 minutes, stirring, until the sauce thickens slightly and coats the pasta.
  5. Add the smoked salmon strips, smoked paprika, garlic powder, onion powder, and a pinch of pepper. Stir and let the flavors infuse over low heat for 1 minute.
  6. Return the fresh salmon cubes to the skillet, stir gently, and simmer for 2 to 3 minutes over low heat, until the salmon is just cooked through.
  7. Add the drained pasta to the skillet and gently toss to coat each piece in sauce. Adjust the seasoning if necessary (the soy sauce and smoked salmon already add salt).
  8. Serve immediately in shallow bowls. Top with a few extra strips of smoked salmon, chopped capers, and finely chopped chives.
