Steamed snow crab legs with garlic-lemon butter (Canadian Maritimes style)

A Canadian Maritimes classic: steamed snow crab legs served with warm, aromatic garlic-lemon melted butter. Simple, generous, and authentic.

Ingredients

  • 1600 g Snow crab legs, raw or pre-cooked frozen
  • 200 g Unsalted butter
  • 6 cloves Fresh garlic
  • 2 pieces Lemon
  • 1 bunch Fresh parsley
  • to taste Fine salt
  • to taste Ground black pepper

Method

  1. Thaw the snow crab legs in the refrigerator for 12 to 24 hours if frozen. Rinse them under cold water and drain well.
  2. Make the garlic-lemon butter: In a small saucepan, melt the unsalted butter over low heat. Add the finely minced garlic and cook for 1 to 2 minutes until fragrant but not browned. Remove from the heat, stir in the juice of part of the lemon, and mix. Season with fine salt and ground black pepper. Keep warm.
  3. Set up the steamer: Fill the bottom of a large pot with water and bring to a boil. Place a steamer basket or rack over the water, ensuring the crab will not be submerged.
  4. Arrange the snow crab legs in a single layer in the steamer basket. Cover and steam over medium-high heat for 5 to 7 minutes if pre-cooked, or 8 to 10 minutes if raw, until the legs are heated through, the meat is opaque and firm, and the shells are bright red.
  5. Meanwhile, cut the remaining lemon into wedges and finely chop the fresh parsley.
  6. Remove the crab legs from the steamer basket and arrange them on a large serving platter. Drizzle with garlic-lemon butter, sprinkle with chopped fresh parsley, and serve immediately with the lemon wedges.
  7. To eat, crack the leg joints with a nutcracker or seafood crackers, extract the meat, and dip it into the remaining butter.
