Miznon-style braised beef pita

A hearty, melt-in-your-mouth sandwich inspired by Miznon's famous beef bourguignon pita, featuring beef braised with Mediterranean spices, tender candied carrots, and a smooth tahini sauce.

Ingredients

  • 400 g braising beef (chuck roast or beef shank)
  • 2 pieces onions
  • 2 pieces carrots
  • 2 cloves garlic cloves
  • 200 ml red wine (such as Burgundy or Cotes-du-Rhone)
  • 200 ml beef broth (or vegetable broth)
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1/2 tsp cayenne pepper
  • to taste fine salt
  • to taste freshly ground black pepper
  • 2 pieces pita bread (large, soft)
  • 20 g fresh parsley
  • 20 g fresh cilantro
  • 100 g tahini paste (sesame)
  • 1 piece lemon
  • 3 à 4 c.à.s water

Method

  1. Cut the beef into large 4-5 cm cubes. Season with salt and pepper.
  2. Slice the onions and roughly chop the garlic. Peel the carrots and cut them into 3 cm rounds.
  3. In a Dutch oven or heavy pot, heat the olive oil over medium heat. Saute the onions and garlic for 3 minutes without browning.
  4. Add the beef pieces and sear on all sides until nicely browned (about 5 minutes).
  5. Deglaze with the red wine, scraping up the browned bits from the bottom. Add the broth, cumin, paprika, cayenne, and carrots. Bring to a boil.
  6. Cover and simmer over very low heat (or in the oven at 150 °C) for 2 hours 30 minutes to 3 hours, until the meat is fork-tender.
  7. Meanwhile, prepare the tahini sauce (see prepared component). Wash and coarsely chop the parsley and cilantro.
  8. When the meat is cooked, remove it from the braising liquid and shred it using two forks. Return the shredded meat to the pot with the carrots and a splash of cooking juices to keep it juicy. Adjust seasoning to taste.
  9. Warm the pita breads (a few minutes in the oven or in a dry skillet). Gently slit one edge open to form a pocket.
  10. Stuff each pita with shredded meat, candied carrots, and melted onions. Scatter generously with parsley and cilantro.
  11. Serve immediately, wrapped in brown paper (or foil), with the tahini sauce on the side for dipping.
