Breakfast yogurt, fruit, and granola popsicles

Creamy Greek yogurt popsicles loaded with fresh fruit and crunchy granola, perfect for a refreshing and wholesome breakfast.

Ingredients

  • 360 g plain Greek yogurt
  • 1/2 tsp vanilla extract
  • 20 ml honey
  • 210 g mixed berries (strawberries, raspberries, blueberries) and/or diced peaches
  • 60 g granola
  • 10 pieces popsicle molds and sticks (2.5 oz / 75 ml each)

Method

  1. In a large bowl, whisk together the Greek yogurt, vanilla extract, and 1 tablespoon of honey until smooth.
  2. Gently fold in the mixed berries and/or diced peaches using a spatula.
  3. Warm the remaining honey (1 teaspoon) in the microwave for 10 seconds or place the jar in a bowl of warm water to loosen it.
  4. In a medium bowl, add the granola and drizzle with the warmed honey. Toss to coat the granola evenly.
  5. Divide the fruit-and-yogurt mixture among the popsicle molds, leaving about 2 cm (3/4 inch) of space at the top.
  6. Gently tap the molds against the countertop to remove any air pockets.
  7. Top each mold with the honey-coated granola.
  8. Secure the lids on the molds, insert the sticks, and transfer to the freezer.
  9. Freeze for at least 2 hours, until the popsicles are completely solid.
  10. To serve, unmold by running the molds briefly under warm water.
