
A fresh and crunchy summer salad combining sweet corn, thin zucchini, and creamy feta, spiced up with red pepper flakes and fresh herbs.
Ingredients
- 4 pieces ears of corn
- to taste salt
- 680 g zucchini
- 8 à 10 pièce zucchini blossoms
- 6 g fresh basil
- 15 g fresh flat-leaf parsley
- 80 ml olive oil
- 60 ml white wine vinegar
- 1/2 tsp red pepper flakes
- to taste ground black pepper
- 113 g feta
Method
- Bring a large pot of salted water to a boil.
- Plunge in the ears of corn and cook until bright yellow and tender, about 3 minutes.
- Drain the ears of corn and let them cool on a plate.
- Once lukewarm, cut the corn kernels off the cob with a knife and transfer them to a large salad bowl.
- Wash the zucchini and slice them into thin strips lengthwise using a mandoline.
- If using zucchini blossoms, tear them into large pieces.
- Roughly chop the basil and parsley.
- Add the zucchini, blossoms (if using), herbs, olive oil, vinegar, and red pepper flakes to the bowl. Toss gently.
- Season with salt and pepper to taste.
- Transfer the salad to a serving platter, crumble the feta on top, and serve immediately.
