Eye of round roast beef sandwich with horseradish mayo

An American deli classic featuring paper-thin slices of rare roast beef, zesty horseradish mayo, red onion, and sharp cheddar on a butter-toasted kaiser roll.

Ingredients

  • 800 g beef eye of round roast
  • 4 pieces sesame seed kaiser rolls
  • 120 g horseradish mayonnaise sauce
  • 4 slices aged sharp white cheddar cheese, cow's milk, 32% fat
  • 1 piece fresh red onion
  • 8 leaves fresh green batavia lettuce leaves
  • 2 tbsp standard refined sunflower oil
  • 30 g pasteurized unsalted butter, 82% fat
  • 1 tsp fine sea salt
  • 1 tsp whole Tellicherry black peppercorns
  • 2 cloves fresh garlic cloves

Method

  1. Take the eye of round roast out of the refrigerator at least 45 minutes before cooking to bring it to room temperature, which prevents thermal shock and ensures even cooking.
  2. Preheat your oven to 120 °C (250 °F) on convection mode. Crush the garlic cloves and coarsely crush the whole black peppercorns in a mortar.
  3. Rub the surface of the beef with sunflower oil, then vigorously coat the entire cut with the fine sea salt, cracked black pepper, and crushed garlic to create an even, aromatic crust.
  4. Heat a cast-iron skillet over high heat until it just begins to smoke lightly. Add the beef and sear each side for 2 to 3 minutes, without piercing the meat, until a crisp, deep-brown crust forms all over.
  5. Transfer the beef to a wire rack set over a baking sheet and place in the oven at 120 °C (250 °F). Roast for about 25 to 30 minutes, until a probe thermometer inserted into the center reads 52 °C (125 °F) for rare.
  6. Transfer the roast to a cutting board, tent loosely with foil, and let it rest for at least 20 minutes so the juices redistribute evenly throughout the meat.
  7. While the meat rests, slice the red onion into paper-thin rings using a mandoline, then rinse and spin-dry the batavia lettuce leaves.
  8. Split the kaiser rolls horizontally. Melt the unsalted butter in a large skillet over medium heat and toast the cut sides of the rolls for 2 minutes, until golden brown and crisp to the touch.
  9. Once the beef is lukewarm or cool, use a meat slicer or very sharp knife to carve it into ultra-thin slices, strictly perpendicular to the grain.
  10. Spread the horseradish mayo sauce generously over the top and bottom halves of the toasted kaiser rolls.
  11. Layer the batavia lettuce leaves onto the bottom buns, top with the sharp white cheddar slices, then drape the thin slices of roast beef in airy ribbons to build height.
  12. Scatter the thin red onion rings over the beef, close with the top buns, press down very gently, and serve immediately.
