
A chef-caliber toast that is easy to make at home: fresh sardines grilled quickly, crusty garlic-rubbed bread, vibrant crushed tomatoes, a thin spread of tapenade, and lemony gremolata to brighten the fish without overpowering it.
Ingredients
- 8 pieces whole fresh sardines, gutted and scaled
- 4 slices sourdough country bread
- 120 g artisanal black olive tapenade
- 500 g ripe seasonal tomatoes
- 60 g fresh gremolata
- 7 tbsp extra-virgin olive oil
- 1 piece red onion
- 2 tbsp red wine vinegar
- 25 g capers in vinegar
- 1 piece red bell pepper
- 1 piece unwaxed lemon
- 2 cloves fresh garlic
- 1 bunch fresh flat-leaf parsley
- 1 pinch ground cayenne pepper
- to taste fine salt
- to taste black peppercorns
Method
- Prepare the tomato base: finely dice the tomatoes, thinly slice the red onion, chop the capers, and combine with the red wine vinegar, a splash of the olive oil, salt, and pepper. Let marinate and rest at room temperature for 15 minutes, until the juices turn red, glossy, and slightly syrupy at the bottom of the bowl.
- Prepare the bell pepper: under an oven broiler preheated to 230 °C or over direct high heat, roast the whole bell pepper for 10 to 12 minutes, turning every 3 minutes until the skin blisters evenly and chars over at least 70% of its surface. Seal in an airtight container for 10 minutes to loosen the skin, then peel away the charred skin, seeds, and ribs. Slice the flesh into tender strips and fold into the crushed tomatoes.
- Prepare the gremolata if not already made: finely chop the flat-leaf parsley, grate the lemon zest, add a tiny pinch of finely minced garlic, and bind with a drizzle of olive oil. It should smell brightly of fresh lemon and remain vibrant green, glossy, and not overly wet.
- Pat the sardines thoroughly dry with paper towels, especially the skin. Gently open the belly cavity to ensure it is completely clean, then season with salt, pepper, a light film of olive oil, and a pinch of cayenne pepper. Let rest for 5 minutes at room temperature while the cooking surface heats up.
- Toast the country bread slices in the oven at 200 °C or in a dry skillet over medium-high heat for 2 to 3 minutes per side, until golden, audibly crisp to the touch, and still tender in the middle. Immediately rub one hot side with a halved garlic clove.
- Preheat a grill pan, plancha, or grill over high heat until it reaches 220 °C (a drop of water should immediately sizzle and roll into beads). Lightly oil the surface and lay the sardines down skin-side down: cook undisturbed for 2 minutes to 2 minutes 30, until the skin is crisp, well-marked, and releases easily without sticking.
- Flip the sardines gently with a spatula as soon as the edges turn opaque and the eyes whiten. Continue cooking on the second side for 1 minute to 1 minute 30, until the internal temperature reaches 55 °C to 60 °C and the flesh flakes into pearlescent petals along the central bone. Transfer immediately to a plate and let rest for 1 minute.
- Assemble immediately: spread each slice of toasted bread with a thin layer of tapenade. Spoon over the crushed tomatoes and pepper strips, draining slightly so the juices do not make the crumb soggy, then top each toast with two piping-hot grilled sardines.
- Finish with the gremolata, a drizzle of olive oil, a few drops of lemon juice, and a grind of black pepper. Serve immediately to capture the temperature contrast between the hot crusty bread, the steaming sardines, and the cool, fresh tomatoes.
