Big Mac Special Sauce

The creamy, gently sweet-and-tangy, slightly spicy American sauce served on a Big Mac: mayonnaise, sweet pickle relish, yellow mustard, vinegar, garlic, onion, and paprika.

Ingredients

  • 180 g American mayonnaise or mild jarred mayonnaise
  • 45 g American sweet pickle relish
  • 25 g American yellow mustard
  • 2 tsp white vinegar
  • 2 g garlic powder
  • 3 g onion powder
  • 2 g ground sweet paprika

Method

  1. Place the mayonnaise in a chilled bowl and whisk until smooth, supple, glossy, and lump-free.
  2. Add the well-drained sweet pickle relish. Mix with a spatula to keep the small pieces visible: the sauce should remain creamy with a slight pickle grain, not become perfectly smooth.
  3. Stir in the American yellow mustard, then the white vinegar. Whisk gently, without beating too hard, until the color becomes pale yellow and uniform.
  4. Sprinkle the garlic powder, onion powder, and sweet paprika evenly over the surface to prevent clumps. Mix thoroughly with a spatula, scraping the bottom and sides of the bowl.
  5. Taste the sauce: it should be creamy, mild, tangy, slightly sweet, with a discreet onion and paprika finish. If it seems too thick, loosen it with a very small touch of white vinegar; if it seems too sharp, let it rest rather than correcting it immediately.
  6. Cover the surface and refrigerate. Let it rest in the cold until the powders hydrate and the flavor becomes even; the sauce is ready when the raw onion aroma rounds out and the texture clearly coats a spoon.
  7. Stir once more before serving. Spread the cold sauce generously on a burger bun, a beef patty, shredded lettuce, pickles, and chopped onions, or use it as a classic burger condiment.
