
A great Wenzhou sweet soup classic, where tender lotus seeds mingle with a clear broth flavored with rock sugar and osmanthus flowers.
Ingredients
- 100 g Dried lotus seeds
- 1 l Water
- 50 g Rock sugar
- 10 g Dried goji berries
- 1 pinch Dried osmanthus flowers
Method
- Rinse the dried lotus seeds thoroughly under cold water, then submerge them in a bowl of warm water to rehydrate. Let soak until they are pliable and swollen to the touch.
- Check the inside of each seed to ensure the small green germ has been removed. If not, split them in half to extract it, as it would add a stubborn bitterness to the broth.
- Pour the water into a large pot and bring to a boil over high heat.
- Drop in the drained lotus seeds, then reduce the heat to maintain a gentle, steady simmer. Cover and cook until the seeds are very tender and easily crush between your fingers.
- Add the rock sugar to the pot and stir gently with a wooden spoon until the crystals are completely melted and the broth becomes slightly syrupy.
- Stir in the goji berries and continue cooking for a few moments so they plump up while remaining whole.
- Remove the pot from the heat, sprinkle the surface with dried osmanthus flowers, then cover tightly. Let rest so the floral aroma delicately infuses the liquid.
- Divide the soup into individual bowls, ensuring the lotus seeds and berries are evenly distributed, and serve at the desired temperature.
