BBQ Chicken Crêpe Taquitos

Small protein crêpes filled with creamy shredded BBQ chicken, rolled and baked until golden. 36g of protein for 276 kcal per serving.

Ingredients

  • 500 g Chicken breast
  • 2 tbsp Extra-light mayonnaise
  • 2 tbsp BBQ sauce
  • 15 g Fresh cilantro
  • 1 tsp Lime juice
  • 250 g Low-fat cottage cheese
  • 2 pieces Eggs
  • 30 g Oat flour
  • 1 pinch Salt
  • 20 g Grated Parmesan
  • 2 tbsp Lightened Alibaba sauce

Method

  1. Cook the chicken: place the chicken breasts in an AirFryer at 200°C for 14 to 16 minutes (or in a pan of gently simmering water for 15 minutes). It is perfectly cooked when the internal temperature reaches 75°C. Let it cool slightly, then shred it using two forks or short pulses in a blender.
  2. Prepare the filling: in a bowl, mix the shredded chicken with the extra-light mayonnaise, BBQ sauce, chopped fresh cilantro, and, if desired, a squeeze of lime juice. Adjust the seasoning and set aside.
  3. Prepare the crêpe batter: in a mixing bowl, whisk the cottage cheese with the eggs, oat flour, and a pinch of salt until smooth. If the batter is too thick, add a little water.
  4. Cook the crêpes: heat a lightly oiled nonstick skillet. Pour in a small ladleful of batter (about 3 tablespoons) and spread it into a thin circle. Cook for 1 to 2 minutes per side, until the edges release and the surface is golden. Repeat to make about 14 small crêpes.
  5. Assemble the taquitos: place a spoonful of chicken filling in the center of each crêpe. Roll tightly into a small cylinder (taquito-style) and arrange the rolls in a baking dish, seam side down.
  6. Bake until golden: sprinkle grated Parmesan (optional) over the taquitos. Bake at 200°C (in a preheated oven) for 5 to 7 minutes, until the cheese has melted and is lightly browned.
  7. Finish: drizzle with a little lightened Alibaba sauce (or another sauce of your choice). Serve hot, optionally with lime wedges and fresh cilantro.
