
A light, thirst-quenching summer Mexican drink, where fresh watermelon is simply blended with water, lime, and a little sugar. Served very cold, it retains the pure taste of ripe fruit.
Ingredients
- 1 kg seedless watermelon flesh
- 500 ml cold water
- 1 piece lime
- 2 tbsp granulated sugar
- 1 pinch fine salt
- 300 g ice cubes
- 4 leaves fresh mint leaves
Method
- Cut the watermelon flesh into even pieces and remove any visible seeds; the fruit should be very cold, juicy, and fragrant.
- Place the watermelon in a blender with a portion of the cold water, then blend until you have a completely fluid, bright red mixture.
- Strain the juice through a fine-mesh sieve, pressing gently with a spoon; the result should be smooth, without thick pulp.
- Add the lime juice, sugar, and salt, then stir until completely dissolved; taste, the drink should be cool, fruity, and slightly tart.
- Gradually thin out with the remaining cold water, aiming for a light, thirst-quenching texture rather than a smoothie.
- Place in the refrigerator for at least half an hour, until the agua fresca is very cold and the flavors have melded.
- Stir just before serving, as the natural watermelon juice may separate slightly as it sits.
- Serve in glasses or ceramic bowls with ice cubes and a few mint leaves; the drink should be ice cold, clear, and highly refreshing.
