Watermelon-lime paletas (Mexican ice pops)

Ultra-fresh, juicy, and tart homemade paletas, true to the Mexican spirit of fruit ice pops. Watermelon dominates, lifted by lime and a hint of salt that wakes everything up.

Ingredients

  • 500 g ripe seedless watermelon
  • 1 piece lime
  • 25 g light cane sugar
  • to taste fine salt

Method

  1. Cut the watermelon flesh into pieces, remove any visible seeds, then taste it: it should be very fragrant and distinctly juicy.
  2. Zest the lime very finely, then squeeze the juice, avoiding the bitterness of the white pith.
  3. Blend the watermelon with the lime juice, cane sugar, and salt until you have a smooth, fluid, and shiny puree.
  4. Taste the mixture: it should seem slightly sweeter and tarter than a juice for drinking, because cold mutes flavors.
  5. Add the lime zest and mix briefly to keep a fresh aroma without making the texture bitter.
  6. Pour the mixture into ice pop molds, leaving a little free space at the top, then tap gently to remove air bubbles.
  7. Insert the sticks and place in the freezer until the paletas are perfectly firm to the touch.
  8. Unmold by quickly running the outside of the molds under warm water, then serve immediately, when the surface becomes slightly frosted and shiny.
