
A lightly sweetened pandan-infused drink, served ice-cold in a ribbed glass with a fresh leaf garnish.
Ingredients
- 6 pieces fresh pandan leaf
- 500 ml water
- 100 g white sugar
- 16 pieces ice cubes
Method
- Wash the pandan leaves, cut them into 5 cm pieces, and lightly crush them with the back of a knife to release their aromas.
- In a saucepan, bring the water to a boil. Add the pandan pieces, reduce the heat, and simmer covered for 10 minutes.
- Remove from the heat and let steep for another 10 minutes, still covered.
- Strain the liquid through a fine-mesh sieve or cheesecloth. Return the liquid to the saucepan.
- Add the sugar and heat over low heat, stirring until completely dissolved (about 2 minutes).
- Let cool to room temperature, then place in the refrigerator until the drink is very cold (at least 2 hours).
- Just before serving, divide the ice cubes between two ribbed glasses. Pour the pandan drink over the ice.
- Garnish each glass with a fresh (uncooked) pandan leaf and serve immediately.
