
A Balkan spiral pastry, filled with fresh cheese between thin layers of crispy dough. A warm slice of burek is a morning staple in the Balkans.
Ingredients
- 400 g Phyllo dough
- 400 g Fresh cheese (feta or farmer cheese)
- 2 pieces Eggs
- 150 g Plain yogurt
- 80 g Melted butter
- 3 tbsp Vegetable oil
- 1 tbsp Sesame seeds
- 1/2 tsp Salt
Method
- Preheat the oven to 200 degrees and oil a large round baking dish.
- Crumble the cheese into a bowl, add one egg and the yogurt, then mix to obtain a creamy filling.
- Mix the melted butter with the oil for brushing the pastry sheets.
- Lay out a sheet of phyllo, brush it with the butter-oil mixture, and place a strip of cheese filling along one edge.
- Roll the sheet up on itself to form a long log, then coil it into a spiral in the dish.
- Repeat with the remaining sheets, continuing the spiral until the dish is filled.
- Beat the second egg and brush the surface with it, then sprinkle with sesame seeds.
- Bake for 35 to 40 minutes until the burek is deep golden brown and crispy, then let cool slightly before cutting into slices.
