Apple crumble

A classic British crumble with melt-in-your-mouth apples topped by a buttery, golden, and crumbly crust. Simple, comforting, and perfect served warm.

Ingredients

  • 700 g Baking apples, such as Golden Delicious or Russet
  • 1 tbsp Lemon juice
  • 30 g Granulated sugar
  • 1/2 tsp Ground cinnamon
  • 1 pinch Fine salt
  • 150 g T55 all-purpose flour
  • 100 g Cold unsalted butter
  • 80 g Brown sugar

Method

  1. Preheat the oven on conventional or convection setting until it is very hot, then lightly butter a household baking dish.
  2. Peel and core the apples, then cut them into even pieces so they cook evenly.
  3. Toss the apples with the lemon juice, granulated sugar, cinnamon, and fine salt until the pieces are slightly glossy and fragrant.
  4. Spread the apples in the dish in an even layer without packing them down, allowing the juices to bubble during baking.
  5. In a bowl, rub the cold butter into the flour with your fingertips until the mixture resembles coarse breadcrumbs with a few small flakes of butter visible.
  6. Stir the brown sugar into the sandy crumble mixture, mixing briefly to keep a light and uneven texture.
  7. Scatter the crumble over the apples, leaving a bumpy surface, as the textured peaks will become crispier in the oven.
  8. Bake until the top is deep golden, the edges are bubbling, and the apples are tender when pierced with the tip of a knife.
  9. Let rest for a few minutes before serving, allowing the juices to thicken slightly while the crust remains crumbly.
