Scottish fruit porridge

A classic Scottish porridge, slowly cooked for a comforting creamy texture, crowned with fresh berries and a drizzle of honey.

Ingredients

  • 200 g Traditional rolled oats
  • 500 ml Whole milk
  • 500 ml Water
  • 1 pinch Salt
  • 200 g Fresh raspberries
  • 150 g Fresh blueberries
  • to taste Wildflower honey

Method

  1. Pour the milk and water into a saucepan, then gently bring to a boil over medium heat.
  2. Add a pinch of salt to the hot liquid to enhance the flavor of the oats.
  3. Rain in the rolled oats while stirring vigorously with a wooden spoon to prevent lumps from forming.
  4. Lower the heat to minimum and simmer for a few minutes, stirring regularly, until the mixture thickens and becomes creamy.
  5. Taste the preparation: the oats should be tender while retaining a very slight chew.
  6. Remove the saucepan from the heat and let rest for a few minutes so the porridge sets and develops its creaminess.
  7. Divide the hot porridge among deep ceramic bowls.
  8. Carefully place the fresh raspberries and blueberries on the surface of the porridge.
  9. Drizzle with honey to provide a natural sweetness that balances the tartness of the berries.
  10. Serve immediately to enjoy the temperature contrast between the piping hot porridge and the fresh fruit.
