The great classic of indulgent breakfasts: slices of brioche richly soaked in an egg and milk batter, browned in butter for a soft center and a caramelized crust.
Ingredients
- 8 slices Brioche
- 250 ml Whole milk
- 3 pieces Egg
- 2 tsp Vanilla sugar
- 1 tbsp Brown sugar
- 50 g Unsalted butter
- 1 tbsp Powdered sugar
- to taste Maple syrup
Method
- In a shallow dish, whisk together the milk, eggs, vanilla sugar and brown sugar until smooth and slightly frothy.
- Dip the brioche slices in this batter, flipping them carefully until perfectly soaked but without falling apart.
- Heat a skillet over medium heat and add a pat of butter, letting it melt until it begins to foam slightly.
- Place the soaked slices in the skillet and brown them on each side until you get a beautiful caramelized and crispy crust.
- Remove the slices from the skillet and place them on a serving plate.
- Repeat the process with the remaining slices, adding fresh butter to the skillet between each batch to prevent the sugar from burning.
- Dust evenly with powdered sugar for a touch of sweet crunch.
- Serve immediately, accompanied by a drizzle of maple syrup poured generously over the still-warm slices.
