
A bold cocktail combining mezcal, passion fruit, lemon, French orange bitters, and beer, served well chilled.
Ingredients
- 120 ml Mezcal (preferably espadín-style)
- 4 pieces Fresh passion fruit
- 2 pieces Lemon
- 1 tsp French orange bitters (such as Amer Picon or quality orange bitters)
- 200 ml Mexican lager (such as Corona or Pacifico)
- to taste Ice cubes
- to taste Fleur de sel (optional, for the glass rim)
Method
- Halve the passion fruits and scoop out the pulp and seeds with a spoon. Pour into a blender and blend for 10 seconds to release the juice. Strain through a fine-mesh sieve to remove the seeds, pressing well. Set aside the juice (about 60 ml per fruit).
- Juice the lemons to obtain about 60 ml of juice.
- Pour the mezcal, passion fruit juice, lemon juice, and French orange bitters into a shaker or large glass. Add a handful of ice and shake vigorously for 15 seconds.
- Divide the mixture between two tall glasses (highball style) filled with ice.
- Top each glass with 100 ml of very cold lager. Stir gently with a bar spoon.
- Optionally garnish with a lemon wheel or half a passion fruit shell. Serve immediately.
