Peanut poha

Flattened rice sautéed with turmeric, onion, and crunchy peanuts, brightened with lemon and cilantro. A light and quick breakfast popular in central and western India.

Ingredients

  • 250 g Flattened rice (poha)
  • 1 piece Onion
  • 60 g Raw peanuts
  • 1 piece Green chili
  • 1/2 tsp Ground turmeric
  • 1 tsp Mustard seeds
  • 8 leaves Curry leaves
  • 1 piece Lemon
  • 0.5 bunches Fresh cilantro
  • 1 tsp Sugar
  • 2 tbsp Vegetable oil
  • 1 tsp Salt

Method

  1. Rinse the flattened rice in a strainer under a trickle of water until it softens, then let drain.
  2. Brown the peanuts in the hot oil, remove them, and set aside.
  3. In the same oil, pop the mustard seeds, then add the curry leaves and chopped chili.
  4. Add the sliced onion and sauté until translucent.
  5. Stir in the turmeric, salt, and sugar, then add the drained flattened rice and fold gently.
  6. Warm over low heat for a few minutes, add the roasted peanuts, and stir.
  7. Off the heat, drizzle with lemon juice and sprinkle with fresh cilantro before serving.
