
Sautéed chicken, crunchy green beans and a soy-vinegar-chili sauce. Highly aromatic, similar to Chinese takeout but calibrated for a diet.
Ingredients
- 500 g sliced chicken breast
- 600 g green beans
- 390 g cooked rice
- 3 tbsp soy sauce
- 2 tbsp Chinese black vinegar or light balsamic vinegar
- 1 clove fresh garlic
- 1 tbsp fresh ginger
- 2 tsp crisp chili oil
Method
- Blanch or microwave the green beans for 3 minutes to tenderize them.
- Sear the chicken over high heat in a nonstick skillet.
- Add garlic, ginger, green beans, soy sauce, vinegar, and 4 tablespoons of water.
- Finish with the chili oil off the heat.
- Meal prep containers: rice on the bottom, chicken and green beans on top. Reheats very well.
