Ham ramen with a soft-boiled egg

A comforting bowl of ramen, very simple: pliable noodles, hot broth, melting ham, soft egg, and fresh scallion. A quick, warm, family-friendly recipe with ingredients that are easy to find in France.

Ingredients

  • 4 pieces instant ramen noodles with soy or chicken broth
  • 1.6 l water
  • 4 slices high-quality deli ham
  • 4 pieces eggs
  • 2 pieces scallions
  • 2 tsp toasted sesame oil

Method

  1. Take the eggs out of the refrigerator while you prepare the rest: they will cook more evenly and be less likely to crack in the hot water.
  2. Thinly slice the scallions, separating the sharper white part from the fresher green part; keep them handy for serving.
  3. Cut each slice of ham into wide, pliable strips, then leave them at room temperature so they warm up gently on contact with the broth.
  4. Bring the water to a simmer in a wide saucepan; the right indicator is visible steam and small, steady bubbles, without a violent rolling boil.
  5. Slip the eggs into the simmering water and cook them until the white is set and the yolk is still soft, then cool them briefly under cold water before peeling them delicately.
  6. In the same hot water, pour the ramen seasoning packets and stir until you get a uniform, fragrant, and slightly cloudy broth.
  7. Add the noodles and let them soften, separating them gently with chopsticks or a fork; stop cooking when they are pliable but still have an elastic bite.
  8. Divide the noodles and piping-hot broth among deep bowls, then place the ham on top so it warms up without drying out.
  9. Add the cut eggs, sprinkle with the white then the green scallion, and finish with a light drizzle of toasted sesame oil just before serving very hot.
