Berry salad with mint

A great summer classic, fresh and fragrant, where ripe berries are simply enhanced with lemon, sugar, and fresh mint. Serve well chilled, when the fruit is juicy and glossy.

Ingredients

  • 300 g strawberries
  • 150 g raspberries
  • 125 g blueberries
  • 100 g red currants
  • 2 tbsp granulated sugar
  • 1 piece lemon
  • 12 leaves fresh mint

Method

  1. Quickly rinse the strawberries, blueberries, and red currants under a stream of cool water, then drain them on a clean kitchen towel until they are no longer wet.
  2. Hull the strawberries and cut them depending on their size, keeping generous pieces that remain juicy to the bite.
  3. Place the strawberries in a bowl, add the sugar and lemon juice, then mix gently until the fruit begins to shine.
  4. Let rest in the refrigerator for a short quarter of an hour, until the strawberries release a light, syrupy red juice.
  5. Add the raspberries, blueberries, and red currants, then lift the fruit with a large spoon to coat them without crushing them.
  6. Finely slice the mint just before serving, when its fragrance is still bright and herbaceous.
  7. Fold the mint into the salad, taste the juice, and adjust only if the fruit lacks sweetness or brightness.
  8. Serve well chilled in a bowl or shallow dish, with the juice distributed at the bottom and a few mint leaves visible on top.
