Soy-Vinegar Dipping Sauce

Classic Chinese dipping sauce, bright and salty, made with light soy sauce, Chinkiang black vinegar, fresh ginger, and a touch of sesame oil.

Ingredients

  • 60 ml light Chinese soy sauce
  • 45 ml Chinkiang black vinegar
  • 15 ml cold water
  • 8 g fresh ginger
  • 4 g granulated white sugar
  • 1 tsp toasted sesame oil
  • 1 piece fresh scallion

Method

  1. Peel the ginger, then grate it very finely over a small bowl so you also collect its juice. The ginger should be moist, fragrant, and almost paste-like, with no large fibrous pieces.
  2. Thinly slice the scallion into very fine rounds. Keep the white part to flavor the sauce and the green part for finishing, giving you both a peppery note and an herbal freshness.
  3. Pour the light soy sauce into a serving bowl. Add the Chinkiang black vinegar and gently mix with a spoon until the color is even, dark brown, and glossy.
  4. Add the cold water and sugar, then stir until no visible grains remain at the bottom of the bowl. Taste: the sauce should be distinctly salty and tangy, but not harsh on the palate.
  5. Stir in the grated ginger and the white part of the scallion. Let it rest at room temperature while the ginger's fragrance spreads; the surface should clearly smell of fermented soy, black vinegar, and fresh ginger.
  6. Add the toasted sesame oil last. Mix very briefly: it should form small glossy beads on the surface rather than disappearing completely into the sauce.
  7. Scatter the green scallion just before serving. Present in small dipping bowls at room temperature with Chinese dumplings, steamed bites, savory crepes, or simply cooked vegetables.
