Pineapple-Coconut Sorbet in the Ice Cream Maker

A simple, smooth, intensely fruity tropical sorbet made with ripe pineapple, coconut milk, and a touch of lime, then spun in the ice cream maker for a dense, melting texture.

Ingredients

  • 650 g very ripe fresh pineapple
  • 200 ml full-fat unsweetened coconut milk
  • 70 g light brown cane sugar
  • 1 piece fresh lime
  • 1 pinch fine salt
  • 20 g unsweetened grated coconut

Method

  1. Prepare the pineapple: remove the peel, eyes, and overly fibrous core. Cut the flesh into even pieces, keeping the juice that runs onto the cutting board. The fruit should smell distinctly of ripe pineapple and be golden yellow, not pale or dry.
  2. Blend the base: place the pineapple, coconut milk, cane sugar, lime juice, and salt in a blender. Blend for a long time until you have a perfectly smooth, glossy purée with no visible fibers on the sides.
  3. Taste and adjust: the base should taste slightly sweeter and brighter than the final result, because cold dulls flavors. If the pineapple is underripe, add a little sugar; if it is very sweet, add a few drops of lime juice.
  4. Fill the pint: pour the mixture into the pint up to the line marked on the machine, without going over it. Gently tap the pint on the work surface to release bubbles and smooth the surface with a spatula.
  5. Freeze: place the pint upright in the freezer, without a domed lid or any tilt. Leave it until the base is hard all the way through; it must be completely frozen, with no soft center when you gently press the bottom of the pint.
  6. Spin: take out the pint, place it in the outer bowl of the ice cream maker, and run the sorbet program. At the end, the texture should be fine and compact, with a frosty but even appearance.
  7. Rework the texture if needed: if the sorbet comes out powdery or grainy, make a small well in the center, add a splash of coconut milk, then run one re-spin cycle. The right texture should hold its shape as a quenelle while melting quickly in the mouth.
  8. Serve: scoop the sorbet with a spoon run under hot water and then wiped dry. Form balls or quenelles in chilled cups. Sprinkle with unsweetened grated coconut just before serving to preserve the dry, fragrant contrast.
