
Doctor Bircher-Benner's original recipe, an authentic and refreshing Swiss muesli made with soaked rolled oats, grated apples, condensed milk and crunchy hazelnuts.
Ingredients
- 120 g Rolled oats
- 200 ml Water
- 4 tbsp Sweetened condensed milk
- 1 piece Lemon
- 4 pieces Granny Smith apple
- 40 g Shelled hazelnuts
Method
- In a large bowl, mix the rolled oats with the water. Let the mixture rest at room temperature until the oats have absorbed all the liquid and are tender.
- Squeeze the lemon to extract the juice and set it aside in a small bowl.
- Roughly chop the shelled hazelnuts to release their aromas and add crunch to the preparation.
- Just before serving, finely grate the whole Granny Smith apples, with their skin, using the large holes of a grater.
- Immediately fold the lemon juice into the grated apples and mix vigorously to prevent them from oxidizing and browning.
- Add the sweetened condensed milk to the soaked rolled oats and stir to dilute well and obtain a creamy texture.
- Mix the tart grated apples with the creamy oat preparation until you get a homogeneous consistency.
- Divide the muesli among serving bowls and generously sprinkle chopped hazelnuts on top for crunch.
