Seared Beef with Smoky Orange Mayo, Bell Pepper, and Red Onion

A quick dish between deli and Tex-Mex: well-seared beef, tender-crisp vegetables, and a creamy orange sauce spiked with paprika, lime, and hot sauce.

Ingredients

  • 300 g ground beef, 15% fat
  • 1 large organic orange
  • 3 tbsp mayonnaise
  • 1 small red onion
  • 1 red bell pepper
  • 1/2 lime
  • 1 tsp smoked paprika
  • 1 à 2 cuillères à café hot sauce
  • 1 tsp Worcestershire sauce
  • 1 tsp balsamic vinegar
  • 1 tbsp olive oil
  • adjust to taste fine salt
  • adjust to taste ground black pepper
  • quelques feuilles, optionnel fresh cilantro

Method

  1. Finely zest half of the orange, then juice the orange. Reserve 2 tablespoons of juice for the sauce and the rest for cooking.
  2. Prepare the sauce: mix the mayonnaise, orange zest, 2 tablespoons of orange juice, the juice from half a lime, 1/2 teaspoon of smoked paprika, hot sauce, a small pinch of salt, and pepper. The texture should coat the back of a spoon; add a few drops of water if it is too thick.
  3. Thinly slice the red onion and cut the red bell pepper into short strips.
  4. Heat a large skillet over medium-high heat with the olive oil. Add the bell pepper and half of the red onion with a pinch of salt. Sauté for 4 to 5 minutes: the vegetables should remain slightly crunchy.
  5. Push the vegetables to one side of the skillet. Add the ground beef, spreading it out without stirring too much for 2 minutes to get a proper sear.
  6. Season the beef with the remaining smoked paprika, Worcestershire sauce, balsamic vinegar, salt, and pepper. Stir, then cook for another 3 to 4 minutes until the meat is well seared.
  7. Pour the remaining orange juice into the skillet. Let reduce for 1 to 2 minutes while scraping up the browned bits: the juice should coat the meat without making a watery sauce.
  8. Off the heat, add the remaining raw red onion for contrast. Taste and adjust with salt, lime juice, or hot sauce.
  9. Serve the beef and vegetables on two warm plates. Drizzle with the smoky orange mayo sauce and finish with a few fresh cilantro leaves if desired.
