Seared Tuna, Melting Vanilla Onions and Smoked Bell Pepper

A highly controlled sweet-and-savory dish: the tuna is just seared, the onions turn sweet and glossy with a hint of vanilla, and the paprika-spiced bell pepper brings smoky depth.

Ingredients

  • 2 pavés de 140 à 160 g fresh tuna steaks
  • 0.5 cloves vanilla bean
  • 2 moyens yellow onions
  • 1 small red onion
  • 1 fresh red bell pepper
  • 1 clove fresh garlic
  • 4 tbsp extra-virgin olive oil
  • 1 tsp smoked paprika
  • 1 petite pincée ground cayenne pepper
  • 1 tbsp apple cider vinegar
  • 1/2 citron fresh lemon
  • 15 g unsalted butter
  • 1 cuillère à café rase light cane sugar
  • 0.5 bunches fresh chives

Method

  1. Thinly slice the yellow onions and the red onion. Cut the red bell pepper into thin strips. Grate or crush the garlic clove.
  2. Split the half vanilla bean lengthwise and scrape out the seeds. Keep the empty half bean as well: it will flavor the onions during cooking.
  3. In a skillet, heat 2 tablespoons of olive oil with the butter. Add the onions, a pinch of salt, the light cane sugar, the vanilla seeds, and the scraped half bean.
  4. Cook the onions for 12 to 15 minutes over medium-low heat, stirring often, until they are meltingly soft and lightly browned. Add the apple cider vinegar, let reduce for 1 minute, then remove the vanilla bean.
  5. In a second skillet, heat 1 tablespoon of olive oil. Add the bell pepper, garlic, smoked paprika, cayenne pepper, salt, and pepper. Cook for 5 to 6 minutes: the bell pepper should remain slightly juicy, not stewed.
  6. Dry the tuna steaks with paper towels. Season them with salt and pepper, then rub them with 1 tablespoon of olive oil and a few drops of lemon juice.
  7. Heat a skillet until very hot. Sear the tuna steaks for 45 to 60 seconds per side for a pink center, or 1 minute 30 seconds per side for a firmer cook.
  8. Place the vanilla onions in the center of the plates, add the paprika bell peppers, then place the seared tuna on top. Finish with a squeeze of lemon juice, fresh chives, and a grind of black pepper.
