Warm Rice Noodles With Sardines, Mint, and Peanut-Vinegar Sauce

A fresh and highly flavorful bowl: supple rice noodles, barely warmed sardines, bright mint, pickled red onion, and a tangy Southeast Asian-style peanut sauce.

Ingredients

  • 2 boîtes de 90 à 120 g canned sardines in olive oil
  • 160 g flat rice noodles
  • 2 cuillères à soupe bombées creamy peanut butter
  • 1 petit bouquet fresh mint
  • 1 small red onion
  • 100 g mung bean sprouts
  • 4 tbsp rice vinegar
  • 2 tsp fish sauce
  • 1 tbsp extra-virgin olive oil
  • 1 lime
  • 1 small clove fresh garlic
  • 1 small fresh red chili
  • 25 g unsalted roasted peanuts
  • 1 tsp brown sugar
  • 1 pinch fine salt

Method

  1. Prepare the quick-pickled red onion: see prepared component.
  2. Place the rice noodles in a large bowl, cover with very hot water, and let soften according to package directions, usually 5 to 7 minutes. Drain, rinse briefly with warm water, and set aside.
  3. Prepare the sauce: in a bowl, combine the peanut butter, 2 tablespoons of rice vinegar, the fish sauce, the juice of half a lime, the finely grated garlic, the brown sugar, and 3 to 4 tablespoons of hot water. Whisk until you get a smooth sauce that coats the back of a spoon but is not pasty.
  4. Drain the sardines, reserving one tablespoon of their oil if it is of good quality. Remove the central bones only if they are bothersome, then break the fillets into large chunks without mashing them.
  5. In a warm skillet, pour the olive oil and, if desired, a tablespoon of the sardine oil. Add the sardines for 45 seconds to 1 minute, just to warm them through and wake up their aroma. Do not sear them too hard.
  6. Toss the noodles with two-thirds of the peanut sauce. Add the mung bean sprouts, half the mint leaves, and half the drained pickled red onion.
  7. Divide between two bowls. Top with the warm sardine chunks, the remaining red onion, the crushed peanuts, the thinly sliced fresh chili if using, and plenty of fresh mint.
  8. Finish with a few drops of lime juice. Serve with the remaining sauce on the side to adjust the intensity.
