Hong Kong milk tea

The famous Hong Kong milk tea, robust and velvety, pairing very strong black tea with evaporated milk for unmatched creaminess.

Ingredients

  • 1 l water
  • 40 g loose-leaf Ceylon black tea
  • 250 ml evaporated milk
  • to taste granulated sugar

Method

  1. In a saucepan, bring the water to a boil over high heat until rolling boils form.
  2. Add the black tea leaves to the boiling water and lower the heat to maintain a steady simmer.
  3. Let steep and simmer for several minutes until the liquid reduces slightly and takes on a deep black color, releasing a strong, robust tea aroma.
  4. Remove from the heat and let rest for a few more minutes so the flavors fully concentrate.
  5. Carefully strain the tea using a very fine mesh strainer or a clean cloth to catch absolutely all the leaves.
  6. In the bottom of each cup, pour the evaporated milk.
  7. Pour the piping hot black tea directly over the evaporated milk in each cup, watching the mixture marble.
  8. Add sugar to your liking and stir gently until completely dissolved.
  9. Enjoy immediately to savor the silky texture and comforting warmth of this Hong Kong classic.
