
Fresh peach rings enveloped in a soft cottage cheese batter, scented with vanilla and cinnamon, then pan-browned and served with a touch of crème fraîche.
Ingredients
- 2 pieces fresh yellow peaches, ripe but firm
- 200 g plain cottage cheese
- 2 pieces eggs
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 100 g T55 all-purpose flour
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1 pinch fine salt
- 2 tbsp sunflower oil
- 150 g thick crème fraîche
Method
- Rinse and dry the peaches. Cut them crosswise into thick slices, then carefully remove the pits with the tip of a paring knife; the rings must remain whole and firm enough to be lifted.
- In a bowl, whisk the eggs with the cottage cheese, maple syrup and vanilla extract until homogenous. Small curds of cheese can remain visible, but no egg white should be separated.
- In a second bowl, whisk together the flour, baking soda, cinnamon and salt. Fold this mixture into the wet ingredients without overmixing; the batter should be thick, mostly smooth and slowly run off the spoon.
- Let the batter rest for five minutes at room temperature; it should puff slightly and coat the spoon without becoming runny.
- Heat a large nonstick skillet over medium-low heat, then spread a thin film of sunflower oil. The oil should sizzle gently when a drop of batter is added, without smoking or browning.
- Pat the peach slices dry, dip them one by one into the batter and turn to coat them in a thin layer. Let the excess drip off for a few seconds, then place the rings in the skillet, spacing them apart.
- Cook the rings for two to three minutes on the first side, until the edges set, the surface forms small bubbles and the bottom is golden brown. Flip with a thin spatula and continue cooking for one to two minutes; the batter center should be set and the peach still soft.
- Transfer to a wire rack or warm plate and repeat with the remaining batter, adding a little oil only if the pan becomes dry. Serve immediately with the thick crème fraîche; the pancakes should remain golden brown on the outside, soft around the peach and warm in the center.
