Turkey polpette with tomato, basil, and zucchini

Sunday-style Italian meatballs, but with lean turkey, a rich tomato sauce, zucchini, and spinach. Filling without the heavy pasta.

Ingredients

  • 600 g ground turkey (5% fat)
  • 1 egg
  • 800 g crushed tomatoes
  • 4 zucchini
  • 200 g fresh spinach
  • 40 g grated Parmesan
  • 1 tsp oregano
  • 1 handful basil

Method

  1. Mix the turkey, egg, oregano, salt, pepper, and 20 g of the Parmesan. Form into 16 small meatballs.
  2. Brown the meatballs in a large dry sauté pan.
  3. Add the tomatoes and zucchini. Cover and simmer for 20 min.
  4. Stir in the spinach for the last 2 min of cooking.
  5. Finish with basil and the remaining Parmesan. Reheats very well in a meal prep container.
